Cinnamon apple German Pancakes

Looking for a quick and delicious breakfast that is a sure crowd pleaser? Look no further! Today I’ll be sharing my recipe for Cinnamon Apple German Pancakes.

German Pancakes are a very common breakfast in our house and most morning my children ask, “Are we having German pancakes today??”. In future posts I’ll share other variations of this recipe.

I make my recipe in a 9×13 and on days when I want a smaller batch (weekdays when my husband is working) I do a 9×9 and then just cut the recipe in half.

Begin by preheating the oven to 425 F. Place 1/4 c butter in the pan and place in the oven to begin melting.

Thinly slice 2 apples (I typically use Granny Smith but here I used Pink Lady. Feel free to use whatever you have on hand.) and then cut each piece into halves or thirds.

Mix apple slices with 1/4 c brown sugar, 1 t cinnamon, and 1/2 t salt. Pour apple slices into the pan with the melting butter. Cook for 5-10 minutes or until the apples are softening.

In the meantime prepare the German pancake batter. In a blender pour 1 1/2 c of milk, 6 eggs, 1 1/2 c flour, 1 t vanilla, and 1/2 t salt. Blend until smooth, scraping down the sides about halfway through. Blending should only take 15-20 seconds.

When apples are softened remove pan from oven and pour batter over the apples. Place back in the oven and let cook for 15-20 minutes.

You’ll know the German pancakes are done when large air bubbles form in the pan and the edges are beginning to very lightly brown.

I have found that it is slightly easier to cut mine when I have waited about 5 minutes. Serve with pure maple syrup. Yum!

Ingredients

Apple Mixture

  • 2 large apples
  • 2 T brown sugar
  • 1 t cinnamon

German Pancakes

  • ¼ c butter
  • 1 ½ c milk
  • 6 eggs
  • 1 ½ c flour
  • 1 t vanilla
  • ½ t salt

Instructions

  • Preheat oven to 425°
  • Place butter in a 9x13 pan. Place pan in the oven to begin melting butter. *Make sure to pay attention to when the butter is melted so you can pull it out.*

Apple Mixture

  • Thinly slice the apples, cutting each slice into thirds or halves.
  • In a small bowl mix the apples with brown sugar, and cinnamon.
  • Pour the apple mixture evenly over the melted butter.
  • Return the pan back to the oven and bake 5-10 minutes or until the apples have begun to soften.

German Pancakes

  • In the meantime mix the milk, eggs, flour, vanilla, and salt in a blender until smooth (15-20 seconds), scraping down the sides halfway through.
  • Pour the mixture over the softened apples and butter. 
  • Bake 15-20 minutes or until large air bubbles begin to form.
  • Serve immediately or within 10 minutes with maple syrup on the side.
